Give Thanks for Good Coffee and Strong Family

One half of the duo that owns Happy Tree Coffee – Meghan McCool – is related to one half of the duo that owns Lafayette Flats – Amy McLaughlin. Meghan’s grandmother, Annabel Day, and Amy’s grandmother, Louise Johnson, are sisters.

Both Annabel and Louise know a thing or two about coffee. Annabel always fired up her percolator when her big sister, Louise came for a visit, knowing that Louise took her coffee HOT – too hot for most mere mortals to consume!

The delicious coffee Annabel was serving up this past Thanksgiving was getting a lot of attention. All the coffee drinkers in the family were oohing and aahing over the rich, smooth taste. They oohing and aahing even more when they found out that Meghan had roasted the beans herself.

Bringing the Beans to Fayetteville, West Virginia


That coffee was so delicious, in fact, that we wanted to share it with our guests at Lafayette Flats. We know the importance of a good cup of coffee, and we have been searching for the perfect roast since we lost our Douwe Egbert connection last year.

Between bites of turkey and dressing, Meghan and her husband/business partner, Trent, told us about the coffee beans they roast to create their signature house blend and a special dark blend. Both beans are sourced from Columbia and provide a smooth taste with a blackberry finish.

For our guest at Lafayette Flats, we decided to try the house blend, with its medium to light taste. Meghan assured us, “it will give you the pep in your step necessary to take on the day!”

Coffee with a Purpose Takes on the New River Gorge


Meghan mentioned something else that made our ears perk up. She explained that her company, Happy Tree Coffee, truly is roasting coffee with a purpose. She and Trent are using coffee as a catalyst to support non-profits doing good work around the world.

After giving it a lot of thought, we decided that proceeds from Lafayette Flats’ purchase of Happy Tree Coffee should go to Friends of New River Gorge National River. This volunteer organization strives to preserve, restore and enhance the natural beauty, features, ecological systems, cultural and historical heritage of the New River Gorge in West Virginia.

Meghan was born and raised in West Virginia, but she and Trent now live and operate Happy Tree Coffee right outside of Pittsburgh, Pennsylvania. They share our love of nature and often travel to many of the same areas we enjoy to hike, paddle and explore.

We all agree that there is no better way to start a day of exploration than with a hot, delicious cup of coffee. For that and so many other heartfelt reasons, we are thrilled to now offer our guests at Lafayette Flats Happy Tree Coffee.
